Greek Inspired Chicken Meatballs Bowl
This chicken meatballs bowl has become something of a fixture in our kitchen lately - the kind of recipe that earns its place in the rotation not through novelty, but through sheer reliability. It keeps me full for hours, which is the real marker of a good meal (flavour is non-negotiable, but staying power is what actually gets you through an afternoon), and it tastes far more indulgent than the effort involved would suggest. The trick is in the batching: meal-prep the meatballs and peppers once, and the rest of the week comes together in the time it takes to boil a kettle.
Ingredients
Makes 10-12 meatballs
Ingredients:
For the meatballs
400g organic chicken mince
1 organic egg
1/2 cup grated parmesan
1/2 cup ground almonds
2 tbsp dried herbs de Provence
An handful of chopped basil
Salt & pepper to taste
For the tzatziki sauce:
1 cup greek yogurt or coconut yogurt
1/2 cucumber
An handful of chopped parsley
The juice of 1/2 lemon
1 tbsp extra virgin olive oil
1 clove of garlic - grated
Salt & pepper to taste
For the rest of the bowl:
2 red bell peppers
Cooked grains of your choice - I used quinoa
A couple of spring onions - finely chopped
Method
Start by cooking the peppers. Cut them in half + remove stalks and seeds. Place
them on a biking tray faced down and drizzle with some olive oil and salt.
Roast them in the oven for 30-35 minutes until soft. Remove and let them cool
down. Using your hands peel off the skin and slice them into strips.
To make the meatballs add all the ingredients into a large bowl and using a fork mix
well.
Shape the mixture into small balls. If the mixture feels a bit wet that’s totally normal.
Heat up some olive oil in a large frying pan. Once hot add in all the meatballs in a
single row.
Cook the meatballs on each side for 3-4 minutes. If you are not sure they are cooked through you can also transfer them to the oven for 10-15 minutes.
To make the tzatziki sauce simply mix all the ingredients into a bowl until, well combined.
Serve the meatballs with the roasted peppers, quinoa, yogurt sauce and cooked grain of your choice.
