Light Sesame Soba Noodle Bowl

This is a quick, nourishing bowl built around bold flavours, plant protein and vibrant crunch.

There are some meals that manage to be both deeply satisfying and refreshingly light at the same time. This cold sesame soba noodle bowl is exactly that. Nutty, salty, tangy and slightly sweet, it layers silky noodles with crisp vegetables, fresh herbs and a creamy miso-tahini dressing that brings everything together.

It’s the kind of bowl that works beautifully for lunch, especially on warmer days or when you want something quick but still nutrient-dense. Soba noodles provide slow-release carbohydrates, edamame adds plant protein and fibre, while the herbs and vegetables bring freshness, colour and crunch.

The dressing is where the real magic happens. White miso contributes umami and beneficial fermented compounds, tahini adds healthy fats and creaminess, and rice vinegar and lime brighten the whole bowl. A little honey or maple syrup balances the savoury elements, creating that addictive sweet-salty-nutty flavour that keeps you going back for another forkful.

It’s also endlessly adaptable. Add grilled chicken, tofu or salmon for extra protein, swap the herbs depending on what you have, or increase the chilli if you prefer a little more heat.

Simple, nourishing and full of flavour, this is one of those bowls that feels just as good to eat as it does to make.


Serves 1

ingredients

For the dressing:

1 tbsp white miso paste 

1 tbsp tahini 

1 tbsp soy sauce 

1 tbsp rice vinegar 

The juice of 1/2 lime 

1 tbsp honey or maple syrup 

1 garlic clove - grated 

For the rest of the bowl:

1 small carrot - peeled or cut into thin julienne strips 

1 Persian cucumber - peeled or cut into thin julienne strips 

1 spring onions - finely chopped 

1/2 cup cooked edamame beans 

1 portion (about 60-80g) soba noodles - cooked according to the packet’s instructions

A sprinkle of sesame seeds 

A sprinkle of toasted peanuts 

A small handful of chopped coriander 

A small handful of chopped mint

Optional:

1 red chilli - finely sliced 

 

METHOD

To make the dressing add all the ingredients into a bowl and mix well until smooth.

Add the cooked noodles, vegetables, herbs and edamame to a large bowl. Pour over the dressing and mix well. Serve with the sesame seeds, peanuts and chopped chilli (if using).
