The Only Date We Want This Valentines, And It’s Delicious
If you’re looking for a Valentine’s Day treat that feels indulgent but quietly nourishing, these cookie-dough-stuffed dates are exactly that. Rich, nutty and seriously moreish, they’re made with whole-food ingredients that deliver more than just sweetness. Think slow-release energy, minerals that support the nervous system, and fats that keep blood sugar steady. They taste like a treat, but they behave more like nourishment.
Ingredients
10-12 juicy medjool dates
1/3 cup ground almonds
3 tbsp smooth and runny almond butter
1 tbsp `Organised (optional)
50g dark chocolate - I have used 90% cocoa
A sprinkle of chopped pistachios for garnish
METHOD
On a double boiler melt the chocolate.
Make a slit in the middle of each date. Remove the pit and arrange all the dates on a baking tray covered with parchment paper. Using a sturdy glass or jar squash the dates down until flattened.
In a bowl mix together the ground almonds, almond butter and (optional) Organised powder.
Add a teaspoon of the mixture to each date. Top with some of the melted chocolate and sprinkle with some chopped pistachios.
Transfer to the fridge to set for 20-30 minutes.
